Five Spice Duck with Blood Orange Sauce

INGREDIENTS (Yields 2 Servings)

For the duck-
2 Duck breasts
2 tsp Chinese five spice powder
¼ cup light soy sauce
3 tbsp blended fresh ground salt & pepper

For the blood orange sauce-
4 blood oranges OR 9 oz blood orange juice
¼ cup extra virgin olive oil
Salt & pepper to taste

Suggested side dish : Roasted Brussels Sprouts with EVOO & salt and pepper

DUCK PREP
Trim any excess fat on the duck breasts. Use your knife to score the fat side of the duck with crisscross lines. In a side bowl, prepare a mixture of salt, pepper and Chinese five spice powder and light soy sauce, and coat the duck on all sides with this mixture.  

Preheat your oven to 375° F.                             

Lightly oil your pan, and sear the duck breasts (fat side down) for 3-4 minutes over medium high heat. Flip over and sear the other side for an additional 3-4 minutes. Transfer the duck breasts to a baking sheet and roast for 7 minutes for medium rare. The internal temperature of the duck breast should not exceed 130° F.

BLOOD ORANGE SAUCE
Juice 4 blood oranges and remove any seeds. Pour approx. 9oz of juice into a saucepan over medium heat. Let the juice heat for 4 minutes, and begin to whisk in ¼ cup EVOO. Season with salt & pepper to taste.
