Fresh Herb Crusted Seabass

INGREDIENTS
1 lb Filet of Seabass (Cleaned, de-boned and skin removed- 8 oz per serving)
2 cloves garlic
3 tbsp parsley
2 tbsp rosemary
2 tbsp thyme
2 tbsp sage
1 tbsp lemon zest
¼ White onion
2 tsp crushed red pepper flakes
2 tbsp extra virgin olive oil
Salt & pepper to taste  


Heat the oven to 400°

Finely chop or blend garlic, parsley, rosemary, thyme, sage, lemon zest, white onion. Mix together in a bowl with crushed red pepper flakes, EVOO and salt and pepper to taste. Briefly heat this herb mixture in a saucepan on medium heat for 2 minutes to allow the herbs to bind together.

Remove mixture from heat and spread an even coat over the top side of the fish. Place fish on a pre-oiled baking sheet and cook in the oven for 12 minutes, until the fish flakes easily with a fork.
