Tuna Tartare Tower

INGREDIENTS Yields 2 Servings
12oz sushi grade ahi tuna
Avocado, sliced
Cucumber, cut into round slices
Chopped cilantro
Chopped scallions
2 tbsp sesame seeds
1 tbsp sesame oil
1 tbsp soy sauce
2 tbsp citrus ponzu sauce
Lime, juiced
Salt & pepper to taste

SPECIAL EQUIPMENT
4 x 6 inch round stainless-steel food mold


Chop all of the ingredients, and mix together in a bowl. Leave the avocado and cucumber separate.

Using the round mold, place a thin layer of cucumbers in the bottom. Fill the center of the mold with the tuna mixture, using a spoon to press down and pack in the tuna. Top the tower with a layer of sliced avocado and carefully pull the mold up to remove.
