Here’s the plan! Make these rainbow colored ice cream sandwiches in advance, hide them in your freezer, and just as your guests are beginning to melt in the June sun - bring these frozen treats out! Everyone will be happy about it.

Store bought sugar cookies work great. To make them a little more colorful, smash some sprinkles and dust a layer on top of the cookie dough before you bake. The melty rainbow colors add a nice touch to the cookie.

Color your ice cream with a small amount of gel food coloring. I like to use a toothpick to apply a very small amount, because a little bit of this coloring goes a very long way. Stir the color in evenly with a spoon, and put the ice cream back in the freezer (for at least an hour) to re-harden before you attempt to assemble the sandwiches.

Once the ice cream has re-frozen, and your sandwiches are prepped, wrap in deli paper (sealed together with tape or cooking twine) and place back in the freezer until you are ready to serve!
