MIX THE DOUGH
I recommend making one batch of the above ingredients per color you are making. Mix the above tortilla ingredients in a medium sized mixing bowl and stir together. Using a blender, take 4 TBSP of the color ingredient you are making (for example red = beets), and pulse in a blender until liquefied. Add the 4 TBSP to the tortilla dough mixture. Lightly flour your hands and a working surface, and knead the dough approx 50 times, until the consistency is firm. If the mixture is too dry, add water. If the mixture is too moist, add flour. Divide the dough into 8 pieces (rolled into balls), and let rest for 30 minutes. Repeat this process for each color you are making.
PRESS THE TORTILLAS
Line your tortilla press with foil or wax paper. If you have a non-stick foil, that will work best! If using regular foil, use cooking spray to help the dough not stick to the surface. Place the dough ball in the center of the press, and lightly clamp down, until the desired thickness and diameter of tortilla is reached. TIP: If pressing ahead of time, use sheets of deli paper or wax paper to separate and stack the uncooked tortillas.
Making tortillas is a fun and easy way to not only incorporate unique flavors, but to customize the color of your tacos, nachos, etc! The only real equipment needed is a tortilla press (under $15 on Amazon). The ingredients are very simple, and things you likely already have at home. You mainly just need the ingredients you choose to flavor and color the tortillas!
RED- Beets or Sundried Tomatoes
ORANGE- Harissa or Achiote
YELLOW- Turmeric or Corn
GREEN- Cilantro
BLUE- Blue Corn Masa
PURPLE- Hibiscus Flower
TORTILLA INGREDIENTS (Yields 8 Flour Tortillas)
2.5 cups all purpose flour
1 TSP baking powder
1 TSP salt
1/4 cup vegetable oil (Can use butter, shortening or lard instead)
1 cup warm water
COOK THE TORTILLAS
Grease a pan with oil or butter over medium heat. Carefully place the pressed tortilla on the pan, and cook for 45 seconds on one side. Flip and cook an additional 30 seconds. Once cooked, place to the side (separated by deli or wax paper) and continue the process until all of your tortillas are cooked! These can be stored in the refrigerator for up to 4 days, and can be reheated in the microwave (covered by a damp towel) or on the stove with light heat and oil.
