Bruschetta & Burrata Bar

Whether you need a solid appetizer for a group, or a delicious date night dinner for 2- bruschetta and burrata make quite the pair! The acidity of the tomatoes and olives paired with the creaminess of the cheese was exquisite on its own - but add in the saltiness of the cured meat and freshness of the basil for a truly dynamic and refreshing dish.

On The Board:
Meats: Proscuitto di Parma, Pancetta, Duck Salami
Cheeses: Burrata, Pecorino Romano
Vegetables: Heirloom tomatoes, Sun Gold tomatoes, Purple & Green basil
Bread: French Baguette
Spreads: Spicy Olive Bruschetta by Sable & Rosenfeld
Homemade Smokey & Spicy Tomato Bruschetta (recipe below)
Homemade Pistachio Pesto (recipe below)

Smokey & Spicy Tomato Bruschetta:
2 large ripe tomatoes (Heirloom if possible!)
4 TBSP fresh basil
1 clove garlic fresh, 2 cloves garlic smoked
2 TBSP EVOO
2 TBSP Calabrian chili oil
Salt and fresh cracked pepper
*Hand chop all ingredients and stir together

Pistachio Pesto:
1/4 cup pistachios, shells removed
1/4 cup fresh basil leaves
2 TBSP EVOO
4 oz Pecorino Romano cheese
Salt and fresh cracked pepper
*Blend all ingredients together, adding EVOO until desired consistency is reached
PRO TIP: If you have extra liquid left in the buratta container, add a few spoonfuls to the pesto for a delicious creamy texture!
