Garlic Lemon Shrimp Caesar

INGREDIENTS (yields 2 servings)
Homemade Croutons
2 hot dog / burger buns
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
1 tsp dried thyme
1 tsp garlic powder
1 tsp salt & pepper
Lemon Garlic Shrimp
10 medium to large sized shrimp (tail on)
1 tsp olive oil
½ squeezed lemon
2 tbsp minced garlic
1 tbsp Dijon mustard
1 tsp hot Hungarian paprika
1 tsp cayenne pepper
Low-Cal Caesar Dressing
1 lemon, juiced
2 cloves garlic, minced
¼ cup Parmesan cheese
2 anchovy filets
4 tbsp non-fat Greek yogurt
Salt & pepper to taste
Jammy Soft Boiled Egg
2 eggs
1 tsp salt
Additional Ingredients
3 tbsp Parmesan cheese
1 lemon, sliced into wheels
1 avocado, sliced
1 head Romaine lettuce, shredded

HOMEMADE CROUTONS
Heat the oven to 350. Cut leftover buns into 1-2 inch cubes, and place in a mixing bowl with 2 tbsp olive oil. Add in 1 tsp of each: dried oregano, basil, thyme, garlic powder and salt & pepper. Mix together until the bread is evenly coated, and place in the oven for 9 minutes on a baking sheet.

LEMON GARLIC SHRIMP
In a mixing bowl, combine washed and deveined shrimp (all but the tail removed) with olive oil, lemon juice, garlic, Dijon mustard, paprika and cayenne pepper. Stir together and place in refrigerator for 5 minutes, or until you are ready to cook. Preheat the oven to 400, and place the shrimp on a greased baking sheet. Cook for 5-6 minutes until shrimp are bright pink.

LOW-CAL CAESAR DRESSING
Place 2 cloves of garlic in a blender, and pulse a few times until it is evenly minced. Add in 2 anchovy filets and pulse a few more times to break them up. Add the lemon juice, Parmesan, Greek yogurt, salt & pepper, and pulse a few more times. If the dressing is too thick, add more lemon juice or milk by the ½ tbsp and continue to pulse until it reaches your desired consistency.

JAMMY SOFT BOILED EGG
Bring 4 cups of water and a dash of salt to a boil. Use a spoon to lower in the eggs (in the shell), reduce the heat to a simmer, and cover for 6.5 minutes. In the meantime, prepare an ice bath in a bowl with cold water and a few cubes of ice. When you have reached exactly 6.5 minutes, carefully remove the eggs with a spoon and place in the ice bath for 2 minutes. Once cooled, remove the shell and cut in half.

TOSS THE SALAD TOGETHER
In a large bowl, combine the romaine lettuce with avocado slices and Caesar dressing, and mix together. Top with the lemon garlic shrimp, homemade croutons and soft-boiled egg. Garnish with a lemon wheel, Parmesan cheese and fresh cracked salt & pepper.
TIP: Leave the croutons on top so they do not become soggy!
